About the Recipe
This pesto recipe actually came along with a burger recipe I found. As all pestos, it’s super easy to make, just a whirl in the blender. What I didn’t expect is how good it is on so many things! It really gives a power punch as a spread on sandwiches, in wraps, on burgers - you name it! Plus, it adds a boost of nutrients, so you get health and deliciousness, all in one. A win-win, if you ask me!
Ingredients
3 cups arugula
½ cup fresh basil
4 cloves garlic
½ cup shredded or grated parmesan cheese
1 cup walnuts
1 ¼ cups olive oil
Preparation
Add in ½ of the olive oil, then the other ingredients into a Vitamix or other high powered blender. As it’s blending, drizzle in the rest of the olive oil in the hole on the top. Blend until well pureed. You may have to use the tamper to get it all incorporated.
Use as a spread on anything that needs a boost of flavor!
