About the Recipe
These cookies have ingredients that, through anecdotal evidence, have been known to help boost milk supply (check out my book for more info about this!), including oats and fenugreek, from the Milk Dust protein powder. These come out more as granola bites, so don’t be surprised when they don’t form a traditional cookie batter. I think they taste best when chilled for a bit in the refrigerator. If you would like them to be a little chewier, add an egg or flaxseed “egg” (if you’re vegan). They make a great on-the-go snack!
Ingredients
Ingredients
2 ½ cups quick oats
½ cup canned or fresh pureed pumpkin
1 scoop Milk Dust Sweet Vanilla (you can use another protein powder, but it won’t have the lactation blend and other nutrients you find in Milk Dust.
1 tsp baking powder
2 tbsp honey
2 tbsp of milk of choice
1 egg, optional
Chocolate chips to your liking! I like chocolate chips with minimal ingredients, like Enjoy Life brand.
Preparation
Combine all ingredients except pumpkin and honey. Stir pumpkin and honey in a separate bowl, then pour into the dry ingredients and mix well. Use your hands to form balls, squeezing them a little to press the oats together. Place onto a lined baking sheet and bake for 15 minutes at 350 degrees. Enjoy!
