Homemade "Chorizo"

About the Recipe

Skip the fat, boost the flavor! We all know that ground chicken and turkey is pretty bland, but that's also what's great about it - you can add just about any seasoning to it to adapt it to any recipe. Here, we add chorizo seasoning mix to give it the flavor profile you get from chorizo, but in a much healthier way.

Ingredients

1 lb ground chicken or turkey

3 Tbsp paprika

1/2 tsp cumin

1 Tbsp chili powder

1 tsp dried oregano

1 tsp dried coriander

1/2 tsp coarse sea salt

1 pinch of cinnamon and ground cloves

2 Tbsp white vinegar

2 cloves garlic, minced

Preparation

Add all of the seasonings to the ground chicken or turkey in a bowl, mix well, then add the vinegar and garlic.  Use your hands to really get it all mixed well together.  Cook in a skillet over medium-high until cooked through, breaking up the chunks as you go.  If you are making my chorizo chili, just throw it in the instant pot with the unseasoned ground chicken or turkey and brown it all together.
